Smoked Aubergine is a North Indian vegetable dish served as an accompaniment to a main meal. The Indian name for this vegetable is brinjal.

Ingredients: 2 large aubergines3 tbsp vegetable oil 6 garlic cloves, finely chopped 2 onions, finely chopped 2 green chillies, finely chopped 2 tsp tomato puree 1 tsp ground cumin ¼ tsp salt 2.5cm/1in piece fresh ginger, peeled and grated A Pinch of garam masala 1 handful of coriander leaves, chopped Preparation: Hold the aubergines with a pair of tongs over a naked flame, turning frequently, until the skin is charred and blistered all over. |
