Curry Recipe for a Diet ? |

Question: I used to be a bit of a curry monster, but found Indian food a bit fattening (caused by the ghee/oil?). I�m currently doing the old South Beach diet and I was wondering if you have any recipes that fit in with that, i.e. a low GI index curry.
Answer: Although, I'm no expert, I suppose it also depends on what carbohydrates are contained in the recipes? Many of my Indian recipes use very little oil especially the ones in my first book Brit Spice.I've taken one of the recipes from there which is below. The G.I Jalfrezi 15ml olive oil 1 onion, peeled and chopped 2 cloves garlic, peeled and sliced 1 green chilli, seeded and chopped 2 tsp curry powder or paste � tsp salt or none if you need to curb that down also 1 tsp tomato puree 2 chicken breasts, skinned and chopped into bite sized pieces 1 tsp peeled and grated root ginger 1 green pepper Heat the oil in a saucepan, put in the onion, garlic and chilli and fry for 4 minutes. Add the curry powder or paste, salt and the tomato puree. Stir for 30 seconds then put in the chicken. Sear it for 3 minutes, then add 125ml/5floz water. Stir and add the ginger and green pepper. Serve with hot naans or chapatis. For more sauce, add an extra 125ml/5fl oz of water and cook for 3 minutes longer. |
